Susan Woods is an assistant professor, teaching courses in food management in the area of nutrition and food science. She oversees the food labs and Central Station, which is a student-run restaurant on campus offering nutrition students a hands-on lab to practice food service and management skills.

Woods has been a dietitian for more than 35 years, working in the areas of clinical, food management and community dietetics.

Woods is also the advisor for the campus chapter of the Food Recovery Network and a lead in the Broncho Bites program. Both programs work toward ending food insecurity on campus. Broncho Bites also works to compost food waste on campus to decrease waste.
