International Group Honors UCO Professor for Food Safety Research

Kanika Bhargava, Ph.D., an assistant professor in human environmental sciences at the University of Central Oklahoma, received the Young Scientist Award from the International Union of Food Science and Technology. She has published more than 20 papers focusing on food science, food microbiology, food preservation and food fermentation.

INTERNATIONAL GROUP HONORS UCO PROFESSOR FOR FOOD SAFETY RESEARCH

Kanika Bhargava, Ph.D., an assistant professor in human environmental sciences at the University of Central Oklahoma, recently received the Young Scientist Award from the International Union of Food Science and Technology.

James Machell, Ph.D., dean of UCO’s College of Education and Professional Studies, said Bhargava’s research will continue to help shape the scholarly dialogue in food sciences.

“Dr. Bhargava’s research gives the food industry a new and natural way to keep food, such as produce, safe. The honor from the International Union of Food Science and Technology recognizes her remarkable experience in the field of food sciences, and we are proud to have a scholar of her caliber at UCO,” Machell said.

The organization’s goal is to increase the safety and security of the world’s food supply. They honored Bhargava’s research on nanotechnology, which deals with emulsions. Emulsions are droplets of one liquid in another liquid; the two liquids do not mix. Bhargava applies techniques that create essential oil nanoemulsions and tests their antimicrobial efficiency in produce, such as leafy greens, melons and sprouts.

Bhargava joined UCO in 2013, teaching Introduction to Nutrition, Principles of Food Preparation and Lab, Food Science and Lab, and Advanced Food Science. She earned a bachelor’s degree at Delhi University, a master’s degree at Guru Nanak Dev University and a doctorate degree at Wayne State University.
